Paula Deen's recipe for an easy corn casserole only calls for a box of Jiffy Mix and five other basic ingredients. Before baking in the oven or cooking in the slow cooker, prepare it up to two days in advance!
Paula Deen’s Corn Casserole
It doesn't get much simpler than Paula Deen's "dump and go" recipe. This side dish pairs well with SO MANY of my favorite dinner recipes and is ideal for the holidays.
Ingredients
- Creamed Corn
- Whole Kernel Sweet Corn
- Jiffy Corn Muffin Mix
- Sour Cream
- Butter
- Cheddar Cheese
How to Make it
You can bake or cook this corn casserole in a slow cooker:
THE OVEN METHOD
All the ingredients—except the cheese—should be combined.
Put in a 10-inch cast iron skillet or a 9 x 13 casserole dish that has been lightly greased.
Bake uncovered for 45 minutes at 350°F.
Put cheese on top. Bake for 10 to 15 minutes, or until golden on top.
5 minutes should pass before serving.
An alternative approach is to immediately sprinkle cheese over the unbaked casserole and bake it (covered) for 55 to 60 minutes. Paula uses the approach that was previously described, but I've done it both ways and had the same results.
Crock Pot Method
- All ingredients—except for the cheddar cheese—should be combined. Fill a Crock Pot with it after lightly greasing it.
- Cook for 2-4 hours on high or 6 on low.
- During the final 20 minutes of cooking, add the shredded cheddar.
- Before serving, make sure the center is stable and set.
Make-Ahead Method
It's simple to prepare this recipe up to two days in advance.
Method 1: Assemble and Refrigerate
Place all the ingredients in a casserole dish, excluding the cheese. When ready to bake, cover with saran wrap and place in the refrigerator. 30 minutes at room temperature should be allowed for it to rest before baking. it sits at room temperature for 30 minutes prior to baking, then bake as outlined
Method 2: Bake and Reheat
Refrigerate after cooling and 50 minutes of covered baking at 350°. Add the cheese shreds, cover it, and reheat for 10 minutes at 300 degrees. For a further 10-15 minutes, bake the dish uncovered at 350° until the cheese is melted. Serve.
Adding Sugar
Although the cornbread mixture already has some sweetness to it, if you prefer a sweeter corn casserole, you can add up to 2 tablespoons of granulated sugar to the mixture.
Storing Leftovers
For 3–4 days, keep in an airtight container.
Although you can freeze this for up to three months, fresh food is preferable.

Ingredients
- 14.75 oz. creamed corn
- 15.25 oz. whole kernel sweet corn, drained
- 8.5 oz. Jiffy corn muffin mix
- 8 oz. sour cream
- 1 stick butter, melted
- 1 cup cheddar cheese, shredded
Instructions
Oven
- Preheat oven to 350 degrees.
- In a large bowl, combine all ingredients except for the cheddar cheese. Be sure to drain the whole kernel corn.
- Pour into a greased 9 x 13 casserole dish or 10-inch cast iron skillet.
- Bake uncovered for 45 minutes.
- Top with shredded cheddar. Bake for an additional 10-15 minutes, until the top begins to brown.
- Let stand for 5 minutes prior to serving.
Crock Pot
- In a large bowl, combine all ingredients except for the cheddar cheese. Be sure to drain the whole kernel corn first. Add it to a lightly greased Crock Pot.
- Cook on high for 2-3 hours or on low for 4.
- Add the shredded cheddar during the last 20 minutes of cooking.
- Ensure the center is firm and set prior to serving.

- Bake covered at 350° for 50 minutes, let it cool, and refrigerate. Add the shredded cheese, cover it, and bake it at 300° for 10 minutes to warm it up. Bake again, uncovered at 350° for 10-15 minutes, until the cheese is melted. Serve.
