WHAT ELSE IS IN THIS TUNA, CUCUMBER, AND MOZZARELLA SALAD?
- Tuna: For convenience, I’m using albacore tuna in a can. Nevertheless, you can also bake flaked tuna steaks!
- Mozzarella: Bocconcini mozzarella balls can be cut into bite-sized pieces and are simple to slice.
- Cucumber: You only need half an English cucumber! You might also use Persian cucumbers as an alternative.
- Shallot: The original salad did not contain any onions, but I believe that a shallot that has been finely sliced provides a crucial taste boost. A small amount of red onion can also be cut into cubes or slices.
- Sweet corn: You can use fresh, frozen, or canned varieties. Just defrost and drain the corn. For a smokey flavor, you may also use fresh corn on the cob.
- Lemon Vinaigrette: For ease of preparation, there is no match for my homemade lemon vinaigrette. Also, it will only enhance the overall “fresh” theme of this dish.

TUNA, CUCUMBER AND MOZZARELLA SALAD
Ingredients
- 4 cups lettuce spring mix
- 1 (5-ounce) can tuna, drained
- 4 Bocconcini mozzarella balls
- ½ English Cucumber
- 1 small shallot
- ⅔ cup sweet corn, cooked and chilled
- ½ recipe lemon vinaigrette
Instructions
- Slice. Thinly slice the mozzarella balls, cucumber, and shallot.
- Toss. In a large bowl, add the lettuce and top with the tuna, mozzarella, cucumber, shallot, and corn. Drizzle with the lemon vinaigrette and stir to combine.
