SWEET POTATO "TOAST" WITH AVOCADO, CUCUMBER, SMOKED SALMON AND POACHED EGG
- 1 sweet potato
- 1 avocado, peeled and sliced
- 2 eggs

- 5 oz package smoked salmon
- 1 tbsp avocado oil
- salt and pepper
