Mint chocolate energy balls are a tasty and healthful treat. They contain flaxseeds, cacao powder, cashews, dates, and a hint of fresh peppermint within.
Now that August has here, it is time for another minty chocolate treat to honour my birthday. Usually, I like decadent treats like my vegan cheesecake with mint or peppermint pieces. But this year, I decided to make energy balls to try something a little bit healthier.
This mint chocolate dish is packed with chocolaty delight and healthy ingredients that you won't feel bad about eating. Because of this, I adore energy balls as a tasty after-dinner treat or a nutritious snack.
MINT CHOCOLATE ENERGY BALLS INGREDIENTS
Healthy fats, fiber, protein, and carbohydrates are the main ingredients of energy balls. And for a deep chocolate flavour, we're including a little cacao powder today. What's in them is as follows.
- Add 1 Cup of Raw Cashews: Cashews are a fantastic source of fiber, healthy fats, and protein.
- 10 Pitted Dates: Medjool dates are a fantastic source of fiber in addition to their inherent sweetness.
- ¼ Cup Cocoa Powder: Unsweetened cocoa powder works just as well as cocoa powder, which I always reach for because it is a little less processed.
- Adding 2 tablespoon Ground flaxseeds: In addition to their many other health advantages, these tiny seeds are fantastic for enhancing digestion.
- Amazing 1 teaspoon Mint Leaf Extract: For just the proper amount of minty freshness, use one teaspoon. Check out the recipe notes below if you're curious about the brand I use.
- A Pinch Of Salt: A dash of salt aids in bringing all the flavours together.
HOW TO MAKE MINT CHOCOLATE ENERGY BALLS
It is recommended to use a food processor to produce the nicest texture (that can easily roll up into a ball). However, if you use a powerful blender, be careful to pulse the mixture (scraping down the sides as necessary) rather than blending it fully.
- Blending: Everything should be combined in a food processor and blended until it resembles coarse sand.
- Mix With Scoop: Simply scoop the mixture with a medium cookie scoop, roll it into balls with your hands, and serve.
THE BEST MEAL PREP SNACK
It's time to include energy balls in your meal preparation if you don't already. They not only keep very well in the refrigerator but also in the freezer.
Preserve It: These may be kept for up to two weeks either in the refrigerator or on your countertop at room temperature. You only need to store them in a closed bag or container to be safe.
Freeze It: Yes, they may be frozen for up to three months. But put parchment paper between them to prevent them from sticking to one another.
Please let me know how they work out if you attempt to make these mint chocolate energy bites. Please share your thoughts in the comments section.
Tips For You:
- You need to add fresh dates if the dates are dry it will not work well.
- If the ball mixture is dry you need to add a little bit of water and mix it again.

LISA’S TIPS
- It’s best to use fresh dates that are nice and moist. If your dates are a bit dried out, you can either soak them in warm water for 10 minutes, or add 1 to 2 teaspoons of water to the food processor. If you have problems with the energy balls not sticking together, you likely need to add a little bit of water and then blend some more.
- When it comes to peppermint extract, this is my favorite! I think it has the most “real” peppermint flavor.
