Sometimes we want food that has many flavors but simple to make. Carrot and Zucchini pasta with Avocado and Cucumber sauce are for you and have lots of different flavors with creamy sauce. I made this recipe from the inspiration of restaurant food in Portland many years ago. It was simple in its look but a combo of many tastes. I changed this recipe many times with a different combination but you would not believe still taste is amazing.
This recipe is a veggie blast that is so healthy. You can eat it for the whole week without any issues. Because you can’t imagine that you are eating veggies. Some lemon juice, carrot, zucchini, avocado, cucumber, and garlic give you a wonderful taste.
SPIRALIZING ZUCCHINI AND CARROTS
I will tell you 5 ways to make zucchini noodles but must watch the video to make zucchini noodles. Spiralizer is the fastest way to make noodles. But there are many other ways to make them. People don’t know about Spiralizer the carrot. You can watch my video if you are bigger. You can peel the carrot and turn it into long ribbons with the help of a peeler.
ZUCCHINI NOODLES WITH AN AVOCADO CUCUMBER SAUCE
To make the pasta creamy and smooth you need to make avocado and cucumber sauce. To make avocado and cucumber sauce put all ingredient of sauce into the blender and blends them well. To make the sauce you need some salt & black paper according to taste, garlic, avocado, lemon juice, and cucumber.
Now I will add a few microgreensto the top of the sauce. You can also use other green herbs like coriander or parsley.
WHAT TO SERVE WITH THIS RECIPE
It is a very tempting recipe that can be taken with several variations. This recipe is good for veggie lovers but if you are non-veg and want to take some protein with it you can add your choice. I think it is a good salad for non-veg but you can take it with Crispy Baked Chicken, BBQ Chicken, Baked Butter Salmon, and Mustered Herb Honey Chicken.

- Take a large bowl and Spiralizer the carrot and zucchini in it. Keep the bowl set aside.
- To make a creamy sauce for the pasta put all ingredients, avocado, cucumber, garlic, lemon juice, salt & paper in the food processor.
- Make a smooth paste of all ingredients.
- Put the sauce into the bowl with zucchini and carrot pasta.
- Mix well all things.

CARROT AND ZUCCHINI PASTA WITH AVOCADO CUCUMBER SAUCE
Ingredients
- 3 zucchini
- 2 large carrots
- micro-greens, garnish
AVOCADO CUCUMBER SAUCE
- 1 avocado, peeled and pitted
- 1 cucumber, peeled and sliced
- 1 lemon, juiced
- 2-3 garlic cloves
- salt and pepper, to taste
Instructions
- Spiralize the zucchini and carrots. Then place them in a large bowl and set aside.
- Add the remaining ingredients (except the microgreens) to a food processor. Process until smooth and creamy.
- Pour the avocado cucumber sauce onto the carrot and zucchini pasta and toss to combine.
- When serving, garnish with an extra sprinkle of black pepper and a handful of micro-greens.
