Pizza is the favorite fast food of vegetarians and non-vegetarians. There are lots of varieties of veg pizza which are free of gluten. Today I came with Black Bean Mexican Pizza.
If you read my post regularly you know better that I can’t plan recipes with the match of national holidays. Before the holiday my mind goes shut and I try to make something that won’t take much time. Due to being a Cali girl, I’m a fan of Mexican food and I can’t live without eating them. Today I told you the truth, the Mexican food that we get in Cali is not enough healthy. Because it cooks into low-quality ingredients and all things deep fry in low-quality oil which is not good for our health.
The truth of my life is that I was not a healthy eater and in high school, I tried to far away from Mexican Pizza. Mostly I spent all my money eating Taco bell.
For many years I had not eaten Mexican pizza but today I think to make my favorite recipes of the past. Today I’m going to make it different and healthy with black beans. It is a good choice for veg Pizza lovers.
I used Cassava flour tortillas to make the base of the Pizza. But if you like corn tortillas you can make them freely with it. I will use black beans, shallots, and cumin instead of refried beans. The combination of black beans with shallots and cumin makes it more flavorful. Now make a layer of Zucchini, Cherry Tomato, and Red Onion. Make the last layer with feta cheese.
After assembling everything I put it into the oven to bake it. To make it eye-catching and tastier I put 2 slices of avocado on the top of Pizza before serving it.
You didn’t have it healthy, fresh, and appetizing at the end of the day. What a healthy veg Pizza! Wouldn’t you say after making it? Enjoy the Mexican veg pizza which is full of nutrients.
Black Bean Mexican Pizza (Gluten-Free Vegetarian)
To make the perfect Black Bean Mexican Pizza all the ingredients with quantity and method are listed below.
Instructions
- To bake the pizza, preheat the pizza first at 400 F.
- Put some oil on both sides of the tortillas with the brush.
- Keep them on a baking sheet and put them into the oven.
- With the help of a knife make some holes in tortillas.
- Bake them for 10 minutes.
- To make them flat use a spatula.
- After baking the tortillas. Heat the pan and put some oil in it to sauté the shallots for around 30 sec. Now add black beans, salt & paper, and cumin into the pan with shallots.
- Sauté all the ingredients for 5 minutes.
- Take out the baking tray of tortillas from the oven.
- Now make the first layer of black beans.
- Put some shallots on the tortilla.
- Add 4 to 5 slices of Zucchini.
- Make 3rd layer of cherry tomato and red onion.
- Pour feta cheese on it at the end.
- Place back the baking tray into the oven and bake the pizza for 12 minutes.
- Serve it with the topping of avocado slices and 3 to 4 cilantro leaves.
To Store and Preheat
- To Store:You can use zip-lock bags to store the tortillas in the fridge for up to 2 days. If you want you can store the whole Mexican pizza before baking it in a zip-lock bag.
- To Preheat: Just place it out from the fridge and bake it in the preheated oven.
