I'm making it short and quick this time (literally), in contrast to my other paleo cake recipes. This berry cake is significantly thinner than usual since it is baked in a rectangle ¼ sheet pan (jelly roll pan), not a round cake pan. Tapioca flour, Almond flour, and coconut flour are the three types of flour I typically use (along with baking soda and salt) in this cake. However, the percentages differ slightly from my other cake recipes.

To absorb part of the moisture, I slightly raised the amount of coconut flour and decreased the number of liquid ingredients. As you may have noticed, this batter is thicker than the ones in my other cake recipes.

- Use non-dairy milk, such as oat or cashew, instead of almond milk.
- For a hint of sweetness, use maple syrup. However, I've cut back on it to avoid overwetting the cake.
- This obtains the ideal amount of moisture from coconut oil.
- Apple Cider Vinegar - to add the necessary fluff.
- The vanilla extract gives food that rich, genuine sweetness.
I'm going to finish it off with 3 cups of fresh berries. You can use any mixture of strawberries, blueberries, and raspberries you want. Just make sure they are scorched so you don't add more water.
BAKING THIS SHEET CAKE IS EASY
First, oil, ghee, or butter a nine-by-13-inch sheet pan (a quarter sheet jelly roll pan). Then, read the instructions below to prepare your oven at 350 degrees Fahrenheit.
- In a big pot, add the dry ingredients.
- The wet components should be combined in another bowl. After that, stir the dry and wet ingredients together until a batter forms. Be aware that the batter will be far thicker than usual.
- Fill the sheet pan with the batter, then use a spatula to smooth the top.
- After adding the berries, bake the dish for 35-40 minutes or until golden brown.
A FEW NOTES TO PERFECT THIS RECIPE
Overbaking is better than underbaking. You should check that the cake's middle, as well as its edges, are colored golden. This will guarantee that the cake is well-baked throughout. Your cake will become too moist when it cools if it is underbaked.
Use fresh, not frozen, berries. Because frozen berries retain too much moisture, your cake will get mushy.
