Russet potatoes are my favourite type of potato to cook in the Instant Pot, though you could use just about any variety. I generally always have a sack of russet potatoes at home, and they're quite inexpensive. I adore them for a variety of reasons, but the taste and texture are what I love the most. When cooked correctly, russet potatoes have a smooth and creamy texture by nature.
Additionally, the flavours of everything, notably the chicken broth we use as the liquid, are infused when they are cooked under pressure. In just 11 minutes under pressure, your Instant Pot can cook perfectly crispy roasted potatoes. Serve this with a well seasoned steak or my Pioneer Woman meatloaf recipe!
How do you roast potatoes in Instant pot
The sweet potato chunks in the Instant Pot roasted sweet potato recipe are sauteed in oil using the "Saute" feature of the appliance to brown them before being cooked under pressure to soften them. Regular potatoes got very stuck to the stainless steel pot on Saute when I tried the same procedure with them, and it was quite difficult to peel them off. Then I searched for information regarding frying potatoes on stainless steel, and the general view was that raw potatoes stick more than cooked ones do due of their starch content. Since sweet potatoes don't have starch, they don't stick, which is why I didn't experience this difficulty with them
The trick is to first pressure boil the potatoes. Next, sauté them. (Seems obvious, doesn't it?) Unfortunately, the Instant Pot company has you doing it the wrong way, which leads to wet potatoes sitting in a pool of chicken broth.
The potatoes appear like this after pressure cooking but before sautéing. The potatoes may split if you neglect to pierce them, as I did with a few. Give them a poke before pressure cooking; it's not a huge problem.
Best potatoes for roasting
Roasting Yukon Golds is the finest method.

Which Instant Pot size is required?
Any size Instant Pot will work with this recipe; I have a 6 quart model.
What would happen if the burn indicator lit up?
This notification appears more frequently the more I use the Instant Pot. I don't worry about the message as long as I make sure to thoroughly clean the bottom of the pan before pressure cooking because it will disappear over time.
Can Roasted Potatoes Be Freezed?
Roasted potatoes can be frozen and reheated, however doing so can cause a slight loss in texture.
When they are completely cool, put them in foil packages for the best freezing results. Unwrap when prepared to serve.
The Best Potato Seasoning
- 1 teaspoon Rosemary
- ¾ teaspoon oregano
- ¾ teaspoon thyme
- ¾ teaspoon sage
- ⅛ teaspoon nutmeg
- ⅛ teaspoon pepper
Ingredients
- 2 lbs. baby gold potatoes*, scrubbed clean
- 3 garlic cloves, peeled
- 1 cup chicken broth
- 2-3 Tablespoons vegetable oil, plus more if needed
- Salt/Pepper, to taste
INSTRUCTIONS
- Each potato should be pierced with a fork before being added to the Instant Pot with the chicken stock and garlic. Make sure the steam valve is closed and the lid is tightly fastened. Pressure For 11 minutes, cook.
- Open the lid and quickly release the steam valve. Remove the potatoes from the chicken stock and pat them dry.
- the Instant Pot's sauté setting. Along with the seasonings for the potatoes, add 1-3 Tablespoons of vegetable oil.
- To allow the initial side of the potatoes to brown, leave them in place for about 5 minutes. They should be carefully rotated with kitchen tongs so that each side is crisp and browned. If more vegetable oil is required, add it. After serving, take them out of the saucepan!
Notes
For roasting, Yukon gold potatoes work best. The smaller Yukon Golds are packaged in netting bags separately from the larger ones. I used 1 + ½ of the 24 oz. bags from my grocery store for this recipe, while 2 full bags might have been used.

Ingredients
- 2 lbs. baby gold potatoes
- 3 garlic cloves
- 1 cup chicken broth
- 2-3 Tablespoons vegetable oil
- Salt/Pepper
Potato Seasoning
- 1 teaspoon Rosemary
- ¾ teaspoon oregano
- ¾ teaspoon thyme
- ¾ teaspoon sage
- ⅛ teaspoon nutmeg
- ⅛ teaspoon pepper
Instructions
- Pierce each potato with a fork and place in the Instant Pot along with the garlic and chicken stock. Secure the lid and ensure that the steam valve is shut. Pressure Cook for 11 minutes.
- Quick release the steam valve and open the lid. Drain out the chicken broth and pat the potatoes dry.
- Set the Instant Pot to sauté mode. Add 1-3 Tablespoons of vegetable oil, along with the potato seasonings.
- Leave the potatoes in place for 5 minutes or so to allow the first side to brown. Use kitchen tongs to carefully rotate them until each side is browned and crisp. Add more vegetable oil if necessary. Remove them from the pot and serve!
