This Pasta Da Vinci recipe from the Cheesecake Factory is simple to prepare at home and delicious! A rich Marsala wine sauce with swirls of savory mushrooms and caramelized onions surrounds the savory pasta.
I've been going through some of the recipes I've posted most frequently since I started my blog in 2014. While some of those recipes are being abandoned, others, including this one, are making a comeback to ensure that no one forgets about them. I can't stop eating this Pasta Da Vinci recipe because it is so creamy and delicious!
Why Pasta Da Vinci is one of my Favorites
- The roasted chicken. A great way to enhance the flavor of the food is to sear the chicken in the pan before cooking it, especially when the Marsala wine deglazes all of those delicious brown bits.
- Those caramelized onions. Do not worry if you or your family dislike onions. When these onions are finished caramelizing, they are so small that you hardly even notice they are there. Really, all they do is give the food a faint hint of sweet caramel flavor.
- Marsala wine. Although I enjoy all types of wine sauces, the nutty flavor that the Marsala wine imparts to this dish makes you feel as though you're dining in a restaurant.
What Kind of Marsala Wine Should I Use?
For savory dishes like this one, dry marsala works best. I also use it to make my copycat recipe for Stuffed Chicken Marsala from Olive Garden.
What Can I Substitute For Marsala Wine?
The Marsala wine flavor definitely dominates the flavors of this dish, but if you want to try a different flavor instead, here are some alternatives:
- For a non-alcoholic Substitute: White grape juice, vanilla extract, and two tablespoons of sherry vinegar are combined in ¼ cup + 2 tablespoons sherry vinegar.
- Madeira Wine
- Dry sherry, not sherry used in cooking, or ½ dry sherry, ½ sweet vermouth
- ¼ cup brandy and 1 teaspoon of dry white wine
Can I Use Button Mushrooms?
Yes! Actually, you can use any type of mushroom you like, but shiitake will give your meal the most authentic flavor. If you'd prefer, you can use less than what is specified in the recipe.
